Cheese review: Maribo

This is a Danish cheese on the soft end of hard cheeses, or the hard end of soft cheeses. It has a light spongy texture, not rubbery like Edam, much softer, it has a delicate flavour which works well when melted on, say, bolognaise, but gets lost on chilli or curry.

A near perfect cheese.
